Ingredients

  • 1 12 oz box of elbow macaroni uncooked
  • 1/4 tsp ground pink Himalayan salt
  • 1/4 tsp ground black pepper
  • 2 tbsp Dijon mustard
  • 1 1/4 cup mayonnaise
  • Chopped dill pickles to your liking of pickles
  • 1/2 Chopped red onion
  • 2 Celery ribs chopped
  • 1 2.25 oz can black olives chopped
  • 1 tsp smoked paprika

Instructions

  1. Boil your eggs until they are hard and allow them to chill before peeling
  2. Start to boil the pasta as per the directions on the box and strain

  3. You can run cold water over the noodles to help the noodles to chill faster
  4. Cut the eggs in half and place the yolks in a separate bowl
  5. Chop up your veggie, egg whites, and olives if needed, I am not ashamed to say I cheated a bit and used pre-chopped black olives in mine
  6. Mix in with the egg yolks the salt, pepper, mustard, and mayo
  7. In a large bowl dump in everything else and mix it up
  8. Then mix in your egg mayo mixture and smoked paprika
  9. Mix into well coated
  10. Refrigerate and serve!
  11. You can garnish with more paprika and whatever else you like.
