Ingredients

  • Boneless Skinless Chicken breasts
  • 3 limes *or lime juice
  • Minced Garlic
  • Olive Oil
  • Cumin
  • 1/4 Cup Snipped Cilantro

Instructions

  1. Prepare your garlic, cilantro, and lime if needed
  2. Trim any fat off your chicken and chop into chunks
  3. In a bowl cover the chicken with some lime juice and mix in with the garlic
  4. Pour a little olive oil into a large skillet or saute pan, so its enough to now quite cover the bottom of the pan. Heat up the pan on a medium high heat so the pan is hot and then add the chicken and allow it to cook
  5. When you chicken has browned and cooked through thru, mix in your cilantro and a bit more lime juice if you would like.
  6. While the chicken is cooking start spiraling your Zucchini to be ready to go into the pan to cook to be mixed with the chicken
  7. Remove the chicken to a bowl and put a little more olive oil in the pan carefully and add in the Zucchini.
  8. Stir the Zucchini till it starts to brown a little and add more spices as desired.
  9. Put chicken back in the pan to mix it up and add more Cilantro and serve!
